Colcannon (Irish: cál ceannann, meaning “white-headed cabbage”) is a traditional Irish dish mainly consisting of mashed potatoes with kale or cabbage. The Beer Bros kicked it up a notch and added Guinness Nitro IPA to the recipe creating some damn good colcannon!
|2 1/2 lbs potatoes, peeled & cubed
5 strips of bacon, chopped
1/2 head cabbage, chopped
1 medium onion, chopped
11.2 oz Guinness Nitro IPA
1/4 cup of sour cream
2 oz butter
|Add potatoes to boiling pot of water and let simmer for 20 minutes.
Fry bacon in pan until crispy. Remove bacon, retaining grease in pan. Add onion and cabbage to the bacon grease and season with salt and pepper to taste over medium heat until tender.
Drain potatoes and return to pot adding Guinness Nitro IPA* and sour cream. Mash the potatoes together and fold in the sauteed bacon and vegetables. Add salt and pepper to taste.
Once combined transfer to serving dish making a well in the center to drop in your butter.
*For an alcohol free version add the Guinness to the cabbage, onion and bacon mixture and let it simmer together in the pan for 5 minutes to cook off the alcohol.
